Lirah Vincotto is crafted from concentrated grape juice and a touch of red wine vinegar is added to provide a slightly tangy taste, provide some acidity and to balance the sweet fruity flavour of the concentrated grape juice. 1kg of grapes goes into making every bottle of Lirah Vincotto. The versatility of Vincotto is one of the reasons that it is so special. It is sweeter and fruitier than a caramelised balsamic.
Vincotto is well suited for use in dairy based desserts and is also perfectly at home being used as a glaze in the final stages of cooking to provide a sweet sticky finish. It is also able to be used similarly to a caramelised balsamic as a garnish on a plate or as a dressing.
