Spring has well and truly sprung on the Granite Belt with the fruit trees blooming and nature waking up from its long winter sleep. To celebrate this we have a selection of spring themed products to tantalise your tastebuds. The first flush of green grass has allowed us to produce a batch of especially creamy cheeses. First we have 300g of our Bastard Tait. It is a washed curd cheese, hand salted in the wheel and matured in our white room to get that perfect white mould mushroom surface rind. It is the perfect spring cheese - light, with a tasty rind and a nutty pate. We are pairing this with a new experimental cheese from our Cheesemaker Sharnell. Called Herbe (French for 'grass'), this is a fully matured washed curd cheese that has been infused with the classic European herb mix of Rosemary, Sage, Thyme, Oregano and Parsley. The result is a full flavoured cheese that just begs to be melted on toast over a layer of spicy tomato or capsicum relish for a light snack, or even used as your main Pizza cheese for main meal. We are pairing this with a bottle of New England Larder Spicy Capsicum Relish (which makes a great Pizza sauce base) and a 250g bag of Manzanilla Olives with herbs chilli & garlic from Mt Stirling Olives.
